Ingredients
- 2 Salmon fillets (approximately 6 oz each)
- 0.5 tsp Garlic powder (for salmon seasoning)
- 0.25 tsp Red pepper flakes (for salmon seasoning)
- 0.5 tsp Chipotle chili pepper (for salmon seasoning)
- 0.5 tsp Italian herb blend (for salmon seasoning)
- 0.5 tsp Spanish style spice blend (for salmon seasoning)
- 0.5 tsp Cajun seasoning (for salmon seasoning)
- 4 cup Kale (chopped and stems removed)
- 1 cup Cherry tomatoes (halved)
- 1 Avocado (sliced or diced)
- 2 Eggs (boiled and sliced)
- 0.25 cup Pickled jalapeños and onions (homemade or store-bought)
- 3 Sweet mini peppers (sliced into rings)
- 0.5 Lemon (juiced for dressing)
- 0.33 cup Olive oil (for dressing)
- 0.33 cup Zesty Italian dressing (bottled dressing used as a base)

Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper or lightly greasing it.

Season the salmon fillets generously on all sides with garlic powder, red pepper flakes, chipotle chili pepper, Italian herb blend, Spanish style blend, and Cajun seasoning.

Place the salmon on the prepared baking sheet and bake for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.

While the salmon cooks, boil the eggs to your preferred level of doneness (approx. 9 minutes for hard-boiled). Once cooked, cool them in an ice bath, peel, and slice.

Prepare the salad base: Wash and chop the kale, halve the cherry tomatoes, slice the sweet peppers, and slice the avocado.

Prepare the dressing by whisking together the juice of 1/2 a lemon, 1/3 cup olive oil, and 1/3 cup zesty Italian dressing. Season with additional salt or pepper to your liking.

In a large bowl, toss the kale with a small amount of the dressing to soften the leaves. Top with the cherry tomatoes, sweet peppers, avocado, boiled eggs, and pickled jalapeños and onions.

Place the warm, cooked salmon on top of the salad. Drizzle with the remaining dressing and serve immediately.
Notes
To soften the kale, you can 'massage' it with a little bit of the dressing or lemon juice for 1-2 minutes before adding the other ingredients. This breaks down the fibrous texture. For the pickled onions and jalapeños, if you don't have homemade ones, store-bought pickled red onions work perfectly.
