Ingredients

  • 0.5 tbsp unsalted butter (melted)
  • 1 egg yolk (separated from the white)
  • 1 tsp pure vanilla extract
  • 0.5 cup blanched almond flour
  • 3 tbsp powdered erythritol (Confectioners Swerve) (do not substitute with stevia)
  • 0.5 tsp xanthan gum (crucial for texture)
  • 0.25 tsp baking powder (heaping measure)
  • salt (a pinch)
  • cooking spray (for greasing)
  • ground cinnamon (for dusting)
  • 0.5 tbsp keto brown sugar substitute (Brown Swerve) (for the filling)
  • 1 tbsp powdered erythritol (Confectioners Swerve) (for the glaze)
  • 0.75 tsp heavy whipping cream (for the glaze)

Steps

    Melt 0.5 tbsp (7 g) of unsalted butter in the microwave for approximately 10 seconds.

    In a medium bowl, combine the egg yolk, 1 tsp of vanilla extract, and the melted butter. Whisk well until combined.

    Add the dry ingredients to the bowl: 0.5 cup (56 g) of almond flour, 3 tbsp (25 g) of powdered Swerve, 0.5 tsp of xanthan gum, a pinch of salt, and a heaping 0.25 tsp of baking powder.

    Mix with a spatula until a crumbly consistency forms, then use your hands to form a compact dough ball.

    Place the dough on a sheet of parchment paper. Press the dough with your hands until it forms a long, thin strip approximately 8 inches (20 cm) long by 1 inch (2.5 cm) wide.

    Lightly spray the surface of the strip with cooking spray, sprinkle with cinnamon to taste, and distribute 0.5 tbsp (6 g) of brown Swerve over the top, pressing it gently into the dough.

    Carefully roll the dough to form the cinnamon roll. If the dough cracks, use your fingers to smooth and seal the cracks.

    Grease a mug or ramekin with cooking spray and place the roll inside.

    Microwave for 60 to 90 seconds, depending on the power of your appliance. (Alternative: 15 minutes in a preheated oven at 350°F / 175°C).

    While the roll cools, prepare the glaze by mixing 1 tbsp (9 g) of powdered Swerve with 0.75 tsp (6 g) of heavy whipping cream until a thick cream is obtained.

    Pour the glaze over the warm cinnamon roll and serve.

Notes

If you do not use xanthan gum, the roll will be very crumbly. It is important to let it cool slightly in the container before removing it or glazing it so that the structure sets.
