Ingredients
- 500 g pasta (uncooked)
- 400 g diced tomatoes (1 can, with juice)
- 4 tbsp tomato paste
- 600 ml thickened cream
- 1.5 cup chicken stock
- 30 g minced garlic
- 1 onion (finely chopped)
- 1 tsp chilli flakes (optional)
- 200 g shredded parmesan (divided)
- salt (to taste)
Steps
- 1
Preheat your oven to 200°C (390°F).
- 2
In a large ovenproof dish, combine the minced garlic, tomato paste, thickened cream, chicken stock, diced tomatoes (including the juice), salt, and finely chopped onion.
- 3
Stir the liquid ingredients together until well combined.
- 4
Add the uncooked pasta to the dish and mix thoroughly to ensure every piece is coated with the sauce.
- 5
Sprinkle the chilli flakes (if using) evenly over the top of the mixture.
- 6
Cover the dish tightly with aluminum foil to trap the steam.
- 7
Bake in the preheated oven for 40 minutes. If the pasta is still firm after this time, leave it in for a few extra minutes.
- 8
Remove the foil and stir the pasta gently.
- 9
Sprinkle half of the shredded parmesan (100g) over the pasta and stir it through the sauce.
- 10
Top the dish with the remaining 100g of shredded parmesan.
- 11
Bake uncovered for an additional 12–15 minutes, until the pasta is tender and the cheese on top is golden and bubbly.
- 12
Serve hot.
Notes
If the pasta is still firm after the initial 40 minutes of baking, keep it covered and bake for an additional 5-10 minutes before adding the cheese.
