Ingredients

  • 1 small head cauliflower (Cut into florets; approximately 500 g edible cauliflower)
  • 2 yellow onion (Thinly sliced; one onion is used in the soup and one for caramelizing)
  • 2 tbsp olive oil (Divided between the soup and caramelized onions)
  • 3 cup vegetable stock (Use enough to cover the vegetables; approximately 720 ml)
  • 0.25 cup heavy cream (Add to taste for a velvety finish; approximately 60 ml)
  • 1 tbsp butter (For caramelizing the onions)
  • salt (To taste)
  • black pepper (Freshly ground, to taste)

Steps

    Prepare the vegetables. Cut the cauliflower into evenly sized florets and thinly slice the onions so they cook uniformly.

    Heat 1 tablespoon of the olive oil in a large saucepan over medium heat. Add one sliced onion and cook for 3 to 4 minutes, stirring occasionally, until softened and translucent.

    Add the cauliflower florets and vegetable stock to the saucepan. Bring the liquid to a simmer, then partially cover and cook for about 20 minutes, until the cauliflower is completely tender when pierced with a knife.

    While the soup cooks, melt the butter with the remaining 1 tablespoon olive oil in a skillet over medium-low heat. Add the remaining sliced onion and a pinch of salt.

    Cook the onions slowly for 25 to 30 minutes, stirring frequently and lowering the heat if necessary, until they are deeply golden, soft, and sweet. Do not let them burn.

    When the cauliflower is tender, blend the soup with an immersion blender until smooth and velvety. Alternatively, blend carefully in batches in a heatproof blender.

    Add the heavy cream and blend or stir until incorporated. Season with salt and freshly ground black pepper, adjusting the consistency with a little additional stock if needed.

    Ladle the hot soup into two bowls and top with the caramelized onions. Serve immediately.
