Ingredients

  • 5 peaches (Peeled, cored, and sliced)
  • 0.5 cup granulated sugar (For the peaches)
  • 0.5 cup brown sugar (For the peaches)
  • 0.25 tsp salt (For the peaches)
  • 6 tbsp butter (Slice into pieces before placing in the baking dish)
  • 1 cup all-purpose flour (For the batter)
  • 1 cup granulated sugar (For the batter)
  • 2 tsp baking powder (For the batter)
  • 0.25 tsp salt (For the batter)
  • 0.75 cup milk (Stir into the batter just until combined)
  • ground cinnamon (Sprinkle generously over the peaches)

Steps

  1. 1

Add the sliced peaches, ½ cup granulated sugar, brown sugar, and ¼ teaspoon salt to a saucepan. Cook over medium heat for a few minutes, stirring as needed, until the sugars dissolve and the peaches begin releasing their juices. Remove from the heat and set aside.

  2. 2

Preheat the oven to 350°F (175°C).

  3. 3

Slice the butter into pieces and place it in a 9×13-inch baking dish. Put the dish in the oven while it preheats, and allow the butter to melt completely. Carefully remove the hot dish once the butter has melted.

  4. 4

In a large bowl, whisk together the flour, 1 cup granulated sugar, baking powder, and ¼ teaspoon salt.

  5. 5

Add the milk to the dry ingredients and stir just until a smooth batter forms. Do not overmix.

  6. 6

Pour the batter over the melted butter in the baking dish. Gently smooth it into an even layer, taking care not to stir the butter and batter together.

  7. 7

Spoon the cooked peaches and all of their juices evenly over the batter.

  8. 8

Sprinkle the top generously with ground cinnamon.

  9. 9

Bake at 350°F (175°C) for 38–40 minutes, until the cobbler is golden on top and the fruit is bubbling around the edges.

  10. 10

Let the cobbler cool briefly, then serve warm with vanilla ice cream if desired.
