Ingredients

  • 4 yellow corn (can be white or another variety; cut lengthwise into 4 parts)
  • 0.5 barra butter (melted (approx. 45g))
  • salt (to taste)
  • garlic powder (to taste)
  • lemon pepper (or black pepper to taste)
  • paprika (to taste for the corn)
  • 1 chorrito vegetable oil (for the spice mix)
  • 4 tbsp mayonnaise (for the dressing)
  • 3 tbsp crema (for the dressing (can substitute with sour cream))
  • 0.5 lime (the juice for the dressing)
  • chipotle chili (or any hot sauce to taste for the dressing)
  • 1 chorrito ketchup (for the dressing)
  • cheese (grated (cotija type or similar) for garnish)
  • cilantro (freshly chopped for garnish)
  • lime (in wedges for serving)

Steps

  1. 1

    Cut the corn ears lengthwise into four pieces so that they take the shape of ribs.

    In a small bowl, mix the half stick of melted butter with salt, garlic powder, lemon pepper (or black pepper), paprika, and a splash of oil until well incorporated.

    Brush the corn pieces with the butter and spice mixture.

    Place the corn on a baking sheet and put into a preheated oven at 400°F (200°C) for 20 to 25 minutes.

    For extra browning, turn on the broiler and leave the corn for an additional 5 minutes.

    While the corn is baking, prepare the dressing by mixing the mayonnaise, crema, juice of half a lime, chipotle, a pinch of salt, paprika, and a splash of ketchup.

    Remove the corn from the oven and serve hot, garnished with grated cheese, chopped cilantro, and accompanied by more lime wedges.

Notes

You can also prepare the corn in an air fryer or deep fry them in oil if you prefer a crispier texture.
