Ingredients
- 200 g Button mushrooms (sliced)
- 200 g Porcini mushrooms (sliced)
- 1 Onion (finely diced)
- 1 EL Butter
- 1 EL Flour (sifted)
- 1 TL Tomato paste
- 150 ml Vegetable broth
- 200 g Cream
- 0.25 Bund Flat-leaf parsley (finely chopped)
- Salt (to taste)
- Pepper (to taste)
Steps
- 1
First, clean the mushrooms with a brush or paper towel. Then cut them into slices.
- 2
Next, peel the onions and cut them into fine cubes.
- 3
Melt the butter in a pan and sauté the diced onions until translucent.
- 4
Add the mushrooms and sauté them as well. Season generously with salt and pepper.
- 5
When everything has developed a good color, reduce the heat, add the tomato paste, and sift in the flour. Sauté everything briefly.
- 6
Afterward, pour in the vegetable broth and cream and let it simmer until it reaches a creamy consistency.
- 7
Finally, season to taste once more. Before serving, sprinkle the Hunter's sauce with finely chopped parsley.
Notes
Variations: Add diced bacon and a splash of Worcestershire sauce for extra savoriness. For a different twist, add diced red bell pepper and paprika powder. For a lighter version, replace cream with milk; for a vegan version, use plant-based cream/margarine.
