Taco Bell Quesarito Copycat

Ingredients
- 1 cup Mayonnaise
- 2 Chipotle peppers in adobo (whole peppers from the can)
- 0.5 tsp Adobo sauce (from the chipotle can)
- 0.5 tsp Chili powder
- 0.5 tsp Sugar
- 0.5 tsp Salt
- 0.25 tsp Garlic powder
- 0.25 tsp Onion powder
- 0.25 tsp Paprika (smoked is ideal)
- 1 Burrito-size flour tortilla (large)
- 1 Taco-size flour tortilla (small)
- 2 tbsp Nacho cheese (Fritos jalapeño cheddar recommended)
- 0.25 cup Shredded cheddar cheese
- 0.5 cup Seasoned rice (precooked Spanish rice works well)
- 0.5 cup Taco meat (seasoned ground beef)
- 1 tbsp Sour cream

Prepare the chipotle sauce by adding 1 cup mayo, 2 whole chipotle peppers, 1/2 tsp adobo sauce, 1/2 tsp chili powder, 1/2 tsp sugar, 1/2 tsp salt, 1/4 tsp garlic powder, 1/4 tsp onion powder, and 1/4 tsp paprika to a blender.

Blend the sauce ingredients until smooth and creamy. Use immediately or chill in the refrigerator to allow flavors to develop.

Warm the large burrito-size tortilla in a microwave or on a skillet to make it pliable.

Spread a layer of nacho cheese over the surface of the large tortilla, then sprinkle with shredded cheddar cheese.

Place the smaller taco-size tortilla directly on top of the cheese layer in the center of the large tortilla.

Add a scoop of seasoned rice and a scoop of taco meat onto the center of the smaller tortilla.

Drizzle the homemade chipotle sauce and a dollop of sour cream over the meat and rice.

Fold the sides of the large tortilla inward and roll it tightly to form a burrito.

Heat a dry skillet over medium heat. Place the burrito in the skillet and toast on both sides until the tortilla is lightly browned and the cheese inside is melted.
Notes
For ultra-tender taco meat similar to Taco Bell's texture, simmer the ground beef in water and seasoning without browning it first. The Fritos Jalapeño Cheddar is recommended as the closest store-bought match for the nacho cheese.
