- 3 Green cardamom pods (Lightly crushed.)
- 1 Bay leaf

Rinse the basmati rice several times, until the water is mostly clear. Soak it in fresh water for 20–30 minutes, then drain thoroughly.

Heat the oil in a heavy-bottomed pot or Dutch oven over medium heat. Add the sliced onion and cook for 8–10 minutes, stirring regularly, until deeply golden but not burnt.

Add the cumin seeds, cinnamon, cardamom, and bay leaf. Stir for about 30 seconds, until the whole spices smell fragrant.
