Weights are estimates. Together, the ingredients weigh about 2.12 kg before cooking, which is about 355 g per serving.

Steps

  1. In a large mixing bowl, combine the mashed potatoes, shredded chicken, diced bell peppers, boiled carrots, and diced green onions.

  2. Season the mixture with salt, black pepper, smoked paprika, garlic powder, onion powder, chicken bouillon powder, and red chili flakes.

  3. Add the corn starch to the bowl, crack in the 2 eggs, and add the shredded mozzarella cheese.

  4. Mix everything thoroughly until all ingredients are evenly distributed.

  5. Shape the mixture into round croquettes and lay them flat on a clean surface or tray.

  6. Prepare the wet batter: In a separate small bowl, whisk together the all-purpose flour and water until a thick slurry forms.

  7. Place the panko breadcrumbs in another shallow bowl.

  8. Dip each croquette into the wet flour slurry, ensuring it is fully coated, then roll it in the breadcrumbs until evenly covered.

  9. Heat frying oil in a pan to 350°F (180 °C) (175°C (350 °F)).

  10. Fry the croquettes in batches for 3 to 4 minutes, turning as needed, until they are golden brown and crispy on all sides.

  11. Remove from oil and serve hot with your favorite dipping sauce.

Notes

Ensure the potatoes and carrots are well-drained after boiling to prevent the mixture from becoming too wet. If the mixture is too soft to shape, you can chill it in the refrigerator for 30 minutes before forming the croquettes.
