Ingredients

  • 1 lb flank steak (trimmed)
  • 2 tsp kosher salt (divided)
  • 0.75 tsp ground black pepper (divided)
  • 2 tbsp neutral oil (such as vegetable oil)
  • 0.5 cup extra-virgin olive oil
  • 0.25 cup fresh flat-leaf parsley (finely chopped)
  • 0.25 cup cilantro (finely chopped)
  • 3 tbsp lemon juice (fresh)
  • 2 tbsp red wine vinegar
  • 2 garlic (grated (about 1/2 teaspoon))
  • 1 tsp honey
  • 0.5 tsp dried oregano
  • 0.25 tsp crushed red pepper
  • 2 cup cherry tomatoes (halved)
  • 1 cup Persian cucumbers (chopped)
  • 0.5 cup roasted red bell peppers (drained and chopped)
  • 0.25 cup red onion (finely chopped)
  • 0.5 avocado (medium, cubed)

Steps

  1. 1

Preheat a large cast-iron skillet over medium-high heat.

  2. 2

Season the flank steak with 1 teaspoon of kosher salt and 1/2 teaspoon of ground black pepper.

  3. 3

Add 2 tablespoons of neutral oil to the preheated skillet and carefully add the steak.

  4. 4

Cook the steak, flipping occasionally, until deeply browned and an instant-read thermometer registers 120°F (48.8°C) for medium-rare, about 6 to 8 minutes per side.

  5. 5

Transfer the steak to a cutting board and cover loosely with aluminum foil; let it rest for 10 minutes.

  6. 6

While the steak rests, prepare the dressing: In a small bowl, whisk together the extra-virgin olive oil, chopped parsley, chopped cilantro, lemon juice, red wine vinegar, grated garlic, honey, dried oregano, crushed red pepper, the remaining 1 teaspoon salt, and the remaining 1/4 teaspoon pepper.

  7. 7

In a large serving bowl, toss together the halved cherry tomatoes, chopped cucumbers, chopped roasted red peppers, and finely chopped red onion.

  8. 8

Add 1/2 cup of the prepared dressing to the vegetables and toss to coat.

  9. 9

Slice the rested steak against the grain and then cut into 1-inch bite-sized pieces.

  10. 10

Add the steak pieces and the cubed avocado to the salad bowl.

  11. 11

Drizzle the remaining 1/4 cup of dressing over the salad and toss gently before serving.

Notes

Always slice flank steak against the grain to ensure the meat is tender rather than chewy. The 10-minute resting period is crucial for the juices to redistribute within the steak.
