Ingredients

  • 2 cup Whole milk
  • 4 Egg yolks (At room temperature if possible)
  • 0.5 cup Sugar
  • 3 tbsp Cornstarch (Also known as corn flour)
  • 1 tsp Vanilla extract
  • 2 tbsp Unsalted butter (Cut into small cubes; optional, for added shine and smoothness)
  • Salt (A pinch, optional)

    Prepare a clean bowl, a balloon whisk, and a fine-mesh strainer. Have a tray or shallow container ready to cool the cream once finished.

    Place the milk in a saucepan. Add the vanilla and, if using, the pinch of salt. Heat over medium heat until very hot and beginning to steam, but do not let it boil vigorously.

    While the milk heats, whisk the egg yolks with the sugar in a bowl until the mixture looks lighter and slightly thickened.

    Add the cornstarch to the egg yolk mixture. Whisk until fully incorporated and smooth, with no dry lumps.

    Pour approximately one-third of the hot milk over the egg yolks while whisking constantly. This tempering prevents the yolks from curdling suddenly.

    Pour the tempered mixture back into the saucepan with the remaining milk. Cook over medium heat, whisking continuously and scraping the bottom and corners of the saucepan as well.

    Continue cooking until the cream thickens and the first bubbles appear. Once it reaches a gentle boil, cook and whisk for approximately 1 minute longer to activate the cornstarch; it should be smooth and have the consistency of thick cream.

    Remove the saucepan from the heat. Add the cubed butter and whisk until completely melted and the cream is glossy and homogeneous.

    Immediately pass the cream through a fine-mesh strainer into a clean container to remove any lumps. Press gently with a spatula if necessary, without forcing the solids too much.

    Press plastic wrap directly onto the surface to prevent a skin from forming. Cool at room temperature for a few minutes, then refrigerate until completely cold, at least 1 hour.
