Ingredients
- 1 lb chicken breast (diced into bite-sized pieces)
- 2 tbsp butter
- 0.5 onion (diced)
- 1 tsp all-purpose seasoning (such as salt, pepper, and garlic powder blend)
- 0.5 cup parmesan garlic sauce (such as Buffalo Wild Wings brand)
- 1 cup long grain white rice (uncooked)
- 2 cup chicken broth
- 1 cup shredded mozzarella cheese
- 4 slices bacon (cooked and crumbled)
- fresh parsley (chopped for garnish)

In a large skillet or pan over medium heat, melt the butter. Add the diced chicken and diced onion.

Season the chicken and onions with your preferred all-purpose seasoning. Cook until the chicken is browned and the onions are translucent.

Stir in the parmesan garlic sauce, uncooked rice, and chicken broth. Mix well to ensure the rice is submerged.

Bring the liquid to a simmer, then cover the pan with a tight-fitting lid. Lower the heat to low and cook for 18 minutes.

Remove the lid and fluff the rice. Top the mixture with the shredded mozzarella cheese and the crumbled cooked bacon.

Cover the pan again for 1-2 minutes or until the cheese is fully melted.

Notes
You can use store-bought parmesan garlic wing sauce for this recipe. If you don't have leftover bacon, cook 4 slices of bacon until crispy before starting the chicken.
