Ingredients

  • 500 g pork sausages (casings removed)
  • 1 red pepper (diced)
  • 2 cloves garlic (minced)
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp chilli flakes (optional)
  • salt and pepper (to taste)
  • 400 g chopped tomatoes (1 tin)
  • 50 g tomato paste
  • 0.5 cup water
  • 4 flour tortillas (medium size)
  • 120 g cheddar cheese (grated)

Steps

    Preheat your oven to 180°C (350°F).

    Heat a large pan over medium-high heat. Add the pork sausage meat (removed from casings) and cook, breaking it up with a spoon, until it is thoroughly browned and caramelized.

    Add the diced red pepper, minced garlic, ground cumin, smoked paprika, chilli flakes (if using), salt, and pepper to the pan. Cook for 4 to 5 minutes until the peppers have softened.

    Stir in the chopped tomatoes, tomato paste, and water. Bring the mixture to a simmer and let it cook for 5 to 10 minutes until the sauce has slightly thickened.

    Slice the flour tortillas into strips and stir them directly into the sauce mixture in the pan until well coated.

    Transfer the entire mixture into a baking dish and spread it out evenly.

    Top the mixture with the grated cheddar cheese.

    Bake in the preheated oven for 20 to 25 minutes until the cheese is golden, bubbly, and completely melted.
