Sweet-and-Spicy Cheese Fingers with Piloncillo and Chile Syrup

Ingredients
- 1 Piloncillo (Approximately 225 g)
- 6 Ground dried árbol chile (Approximately 3 g)
- 4 tbsp Oyster sauce
- 0.25 rama Cinnamon stick (One-quarter of a stick)
- 1 pieza Beer (One beer; approximately 355 ml)
- 500 g Firm frying cheese (Cut into sticks or fingers)
- 1 cup All-purpose flour (For breading)
- 2 Eggs (Beaten; the transcript indicates dipping the cheese in egg)
- 2 cup Panko (For breading)
- Vegetable oil (As needed for deep-frying in hot oil)

Place the piloncillo, ground árbol chile, beer, cinnamon, and oyster sauce in a pot.

Bring the pot to medium heat and cook until the piloncillo has completely dissolved. Continue reducing the mixture until it has a thick, glossy, honey-like consistency, approximately 10 to 15 minutes.

Remove the syrup from the heat, transfer it to a bowl, and let it rest until cool. It will thicken slightly as it cools.

Cut the firm cheese into finger-sized sticks. Prepare three containers: one with flour, another with the beaten eggs, and another with the panko.

Heat plenty of vegetable oil to approximately 175 °C. Carefully fry the cheese fingers in batches so the temperature does not drop too much, until golden and very crispy.

Remove the cheese fingers and drain them on a rack or paper towels. Serve hot.

Drizzle the cooled piloncillo syrup over the fingers. You can dip them completely, as in the video, or brush them with the syrup if you prefer a lighter coating.
