Ingredients
- 1 Rye bread (One slice, approximately 62 g)
- 1 Banana (Approximately 80 g; halved lengthwise and then cut into slices that are not too thin)
- 15 g 100% peanut butter
- 80 g 0% Greek yogurt
- 15 g Vanilla whey protein (100% Real Whey protein, vanilla flavor)
- 5 g Desiccated coconut
- 5 g Erythritol and stevia blend (Divide the blend: use one part for the banana and the rest for the cream)
- 2 g Ground cinnamon (Divide together with the sweetener between the banana and the cream)

Preheat the air fryer to 180 °C. Halve the banana lengthwise, then cut it into slices that are not too thin. Arrange the slices, spread out, on a small baking tray or parchment paper, then sprinkle them with some of the erythritol, stevia, and cinnamon blend.

Cook the banana in the air fryer at 180 °C for approximately 5–8 minutes, checking it toward the end. It should be warm, softened, and slightly golden or caramelized, depending on the desired level of doneness.

Meanwhile, toast the rye bread until crisp on the outside, keeping it warm for assembly.

Prepare the cream in a bowl: add the Greek yogurt, vanilla whey protein, desiccated coconut, and the remaining erythritol, stevia, and cinnamon blend.

Mix thoroughly until smooth and fairly thick. The consistency should be firm enough to stay on the toast without running.

Spread the peanut butter over the still-warm toast. For a more decorative effect, you can drizzle it over the cream instead of spreading it directly on the bread.

Add the yogurt and whey cream, spreading it in an even layer over the peanut butter.

Notes
The creator suggests replacing the Greek yogurt with cottage cheese. For a more indulgent version, you can add a drizzle of honey, taking the additional calories into account.
