Ingredients

  • 100 g egg white
  • 90 g ricotta
  • 50 g bonbon-flavored oat flour
  • 15 g Supreme vanilla-flavored whey protein (Optional; the author adds it to increase the protein content. Chocolate whey can be used for a more chocolatey flavor.)
  • 5 g unsweetened defatted cocoa powder
  • 10 g 90% dark chocolate (Chopped and incorporated directly into the batter.)
  • 30 g coconut water (Alternatively, use milk or a plant-based beverage as needed to obtain a creamy batter.)
  • 3 g baking powder
  • 1 g baking soda (Optional.)
  • cinnamon (A sprinkling, as needed.)
  • salt (A pinch.)

Steps

  1. 1

Chop the 10 g of 90% dark chocolate.

  2. 2

In a bowl, combine the ricotta, egg white, defatted cocoa powder, a pinch of salt, and a sprinkling of cinnamon.

  3. 3

Add the vanilla whey protein, baking powder, optional baking soda, oat flour, and chopped dark chocolate.

  4. 4

Mix everything until you obtain a smooth batter. If it is too thick, gradually add the coconut water, or milk or a plant-based beverage, until the batter becomes creamy again.

  5. 5

Heat a pan; it should be hot but not scorching. Pour all the batter into the pan.

  6. 6

Cook over the lowest heat with the lid on for 8-10 minutes. Do not increase the heat to speed up cooking, otherwise the panmike may crumble.

  7. 7

Check that the panmike has released from the pan. Slide a spatula underneath, use two small taps to bring it onto the tip of the spatula, and turn it gently.

  8. 8

Cook for approximately another 5 minutes on the other side.

  9. 9

Transfer the panmike to a plate and serve without adding toppings or creams. The author cuts it in half and eats it as is.
