Ingredients

  • 2 lb beef short ribs (Korean-style (flanken-cut))
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp sugar
  • 0.25 tsp MSG (a pinch)
  • 1 tbsp chicken bouillon powder
  • 1 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp thick soy sauce (dark soy sauce)
  • 2 tbsp garlic oil (can be substituted with regular vegetable oil)
  • 2 tbsp minced shallot and garlic (mixed)

Steps

    Place the short ribs in a large bowl with water and let them soak for about 15 minutes to allow excess fat and impurities to rise to the surface.

    Wash the ribs under cold running water, scrubbing to remove any residue or foam, and rinse well.

    In a small bowl, prepare the marinade by combining the garlic powder, onion powder, sugar, MSG, chicken bouillon powder, oyster sauce, soy sauce, and thick soy sauce.

    Add the garlic oil and the minced shallot and garlic mixture to the marinade. Mix well until all ingredients are integrated.

    Place the cleaned ribs in a container or marinating bag and pour the sauce over them, ensuring each piece is well coated.

    Let the meat marinate in the refrigerator for at least a couple of hours, though it is recommended to let it rest overnight so the flavors penetrate deeply.

    Cook the ribs on the grill or in a skillet over medium-high heat until they reach the desired level of doneness and are slightly caramelized on the outside.

Notes

The initial soak is a common technique in Vietnamese cooking to clean the bones and meat, resulting in a cleaner flavor. If you don't have garlic oil, you can heat a little oil with minced garlic until fragrant and use it after it cools down.
