Ingredients
- 1.75 cups all-purpose flour
- 0.75 tsp ground cinnamon
- 0.5 tsp table salt
- 0.5 tsp baking powder
- 16 tbsp unsalted butter (melted and cooled)
- 0.75 cup sugar
- 1 egg yolk (large)
- 2 tsp vanilla extract
- 1 cup freeze-dried raspberries

In a second bowl, whisk melted butter, sugar, egg yolk, and vanilla until very smooth.

Notes
You can substitute cardamom for the cinnamon and other freeze-dried berries for the raspberries. Avoid sweet freeze-dried fruit like banana or mango. It is critical to dust the cookies while they are still very warm so the powder adheres. Dough logs can be frozen for up to two months; thaw in the refrigerator for 6 hours before slicing. Cookies can be stored at room temperature for up to 10 days.
