Ingredients

  • 1 lb mild Italian sausage
  • 8 oz spinach (Roughly chopped)
  • 2 tbsp garlic (Minced)
  • 3 cup low-sodium chicken broth (Add a little more if you want the soup thinner)
  • 2 cup half-and-half or heavy cream (Use half-and-half or heavy cream)
  • 3 oz Parmesan cheese (Grated; freshly grated is recommended because it melts better. Reserve extra for topping if desired.)
  • gnocchi (1 package; cook according to package directions)
  • 1 tbsp tomato paste
  • 1 tsp olive oil (For sautéing)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp crushed red pepper flakes
  • 1 tsp Italian seasoning
  • 1 tsp oregano (Dried)
  • 1 tsp dried parsley
  • 1 tsp onion powder
  • 1 tsp garlic powder

Steps

  1. 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

  2. 2

Add the minced garlic and sauté for about 30 seconds, until fragrant.

  3. 3

Add the Italian sausage. Cook it while breaking it up with a spoon, until it is completely browned and cooked through.

  4. 4

Add the salt, black pepper, crushed red pepper flakes, Italian seasoning, oregano, dried parsley, onion powder, garlic powder, and tomato paste. Stir until well combined, then cook for 1–2 minutes.

  5. 5

Pour in 3–4 cups of low-sodium chicken broth and bring the soup to a boil.

  6. 6

Add the gnocchi and cook for 3–5 minutes, or according to the package directions.

  7. 7

Reduce the heat to low. Stir in the half-and-half or heavy cream and the grated Parmesan cheese.

  8. 8

Stir in the roughly chopped spinach and allow it to wilt.

  9. 9

Let the soup gently simmer for about 10 minutes, stirring occasionally, until it has thickened and become creamy.

  10. 10

Serve warm, with extra Parmesan on top if desired.

Notes

The source gives a range of 3–4 cups broth and notes that additional broth can be added for a thinner soup. The package size for the gnocchi is not specified. The source states approximately 10 minutes of prep and 25 minutes of cooking.
