Ingredients
- 2 chicken breast (fillets pounded thin)
- 1 cup panko breadcrumbs (Japanese-style)
- 0.5 cup marinara sauce (homemade or good-quality)
- 4 oz mozzarella cheese (sliced or shredded for melting)
- 2 Italian bread (baguette-style or round, cut in half)
- 2 tbsp garlic butter (for toasting the bread)
- fresh herbs (chopped basil or parsley for finishing)
- oil for frying (enough for shallow-frying)
Steps
- 1
Prepare the chicken breasts by pounding them until they are an even thickness.
- 2
Bread the chicken by coating it in the panko breadcrumbs, pressing firmly so they adhere and form a golden crust.
- 3
Heat the oil in a skillet and fry the chicken until golden and crispy on both sides.
- 4
Spread the garlic butter on the cut sides of the Italian bread and toast in the oven or skillet until lightly golden.
- 5
Top the fried chicken with the marinara sauce and slices of mozzarella cheese.
- 6
Place the chicken in the oven or use a kitchen torch to melt the cheese until bubbling.
- 7
Assemble the sandwich by placing the cheesy chicken on the toasted garlic bread, finish with the fresh herbs, and close the sandwich.
Notes
For a crispier result, make sure the oil is very hot before adding the chicken. Using panko instead of regular breadcrumbs ensures a superior texture.
