Ingredients
- 1 head Broccoli (Cut into florets)
- 1 Onion (Diced)
- 4 cloves Garlic (Minced)
- 350 g Pasta of choice
- Salt (To taste)
- Black pepper (To taste)
- 1 tsp Garlic granules
- 1 tsp Onion granules
- 1 tsp Paprika
- 0.5 tsp Ground turmeric
- 570 g Butter beans (Include the stock from the jar)
- 200 ml Milk
- 1 tsp Dijon mustard
- 1 tbsp Nutritional yeast (Video shows Engevita with B12)
- Oil or butter (A little, for frying the onion; use oil or butter)
- Crispy chilli oil (Optional, to serve for adults)
Steps
- 1
Cook the pasta according to the package instructions.
- 2
About halfway through the pasta's cooking time, add the broccoli florets to the pasta and cook them together.
- 3
In a separate pan, heat a little oil or butter. Add the diced onion and cook until softened or translucent.
- 4
Add the minced garlic to the onion and cook briefly.
- 5
Stir in the salt, black pepper, garlic granules, onion granules, paprika, and ground turmeric. Cook for about 30 seconds; use the turmeric mainly for color, so add only a modest amount if adjusting to taste.
- 6
Add the butter beans with all of their jar stock and mix through.
- 7
Transfer the bean mixture to a blender. Add the milk, Dijon mustard, and nutritional yeast.
- 8
Blend the mixture until smooth.
- 9
Drain the cooked pasta and broccoli, then return them to a suitable serving vessel.
- 10
Pour the sauce over the drained pasta and broccoli and stir to coat evenly.
- 11
Serve in bowls. Add crispy chilli oil to the adults' portions if desired.
Notes
The recipe says to cook the pasta according to its package instructions and add broccoli halfway through; exact pasta cooking time is not specified. The amount of oil or butter for frying and crispy chilli oil for serving is unspecified.
