Ingredients
- 1 lb large shrimp (peeled and deveined)
- 2 tbsp olive oil (divided)
- 3 garlic (cloves, minced)
- 0.5 cup sun-dried tomatoes (chopped, drained from oil)
- 1 cup heavy cream
- 0.5 cup chicken broth
- 0.5 cup parmesan cheese (freshly grated)
- 8 oz pasta (such as penne, rigatoni, or linguine)
- 0.5 tsp red pepper flakes (adjust to taste)
- 1 tsp dried oregano
- fresh basil (chopped, for garnish)
- salt and black pepper (to taste)

Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.

While the pasta cooks, season the shrimp with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.

Add the shrimp to the skillet in a single layer. Sear for 1-2 minutes per side until pink and opaque. Remove the shrimp from the pan and set aside on a plate.

In the same skillet, add the remaining tablespoon of olive oil if needed. Add the minced garlic and chopped sun-dried tomatoes. Sauté for 1-2 minutes until the garlic is fragrant.

Pour in the chicken broth to deglaze the pan, scraping up any browned bits from the bottom. Stir in the heavy cream, red pepper flakes, and dried oregano.

Bring the sauce to a gentle simmer. Stir in the grated parmesan cheese until melted and the sauce has slightly thickened.

Add the cooked pasta and the seared shrimp back into the skillet. Toss everything together until the pasta is thoroughly coated in the sauce and the shrimp is warmed through.

Notes
For a lighter version, you can substitute half-and-half for the heavy cream, though the sauce will be less thick. If the sauce becomes too thick while tossing, add a splash of reserved pasta water.
