Ingredients

  • 1 lb shrimp (peeled and deveined)
  • 2 tbsp olive oil
  • 2 tbsp butter (unsalted)
  • 4 garlic (cloves, minced)
  • 0.5 cup sun-dried tomatoes (chopped)
  • 1 tsp red pepper flakes (adjust to taste for spice level)
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese (freshly grated)
  • 12 oz pasta (such as fettuccine or linguine)
  • 2 tbsp fresh parsley (chopped for garnish)
  • salt and black pepper (to taste)

Steps

    Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining.

    Pat the shrimp dry with paper towels and season them lightly with salt and pepper.

    In a large skillet, heat the olive oil over medium-high heat. Add the shrimp in a single layer and sear for 1-2 minutes per side until pink and just cooked through. Remove shrimp from the skillet and set aside.

    In the same skillet, melt the butter over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

    Stir in the chopped sun-dried tomatoes and cook for another minute.

    Pour in the heavy cream and bring to a gentle simmer. Let it cook for 2-3 minutes until slightly thickened.

Notes

For extra heat, increase the red pepper flakes to 2 teaspoons. You can also add a tablespoon of tomato paste to the sauce for a deeper color and richer flavor.
