- 2 Bell peppers (Diced (one red, one green))
- 0.5 Red onion (Diced)
- 1 can Black beans (15 oz, rinsed and drained)
- 1 packet Taco seasoning (Low sodium preferred)
- 4 Low-carb tortillas (Large size (e.g., Mission Carb Balance))
- 0.5 cup Shredded light cheese (Reduced fat Mexican blend or cheddar)
- 1 tbsp Olive oil (For sautéing)

Heat olive oil in a large skillet over medium-high heat. Add the diced bell peppers and red onion, sautéing for 5-7 minutes until softened and slightly charred.

Add the lean ground beef to the skillet. Break it apart with a wooden spoon and cook until fully browned, about 6-8 minutes. Drain any excess fat if necessary.

Stir in the taco seasoning and the rinsed black beans. Add a splash of water if the mixture seems too dry. Simmer for 2-3 minutes to allow flavors to meld.

Lay out the low-carb tortillas on a clean surface. Evenly distribute the beef and bean mixture among the four tortillas.
