Steamed Chicken Lumpia (Cheung Fun Style)
A healthy, high-protein take on Chinese rice noodle rolls (Cheung Fun) using ground chicken breast wrapped in rice paper and steamed until tender.

Ingredients
- 500 g ground chicken (preferably chicken breast)
- 0.5 carrot (small, minced)
- 1 red onion (minced)
- 4 garlic (minced)
- 0.25 cup green onions (chopped)
- 2 tsp oyster sauce (for meat mixture)
- 1 tsp sesame oil (for meat mixture)
- 0.5 tsp salt
- 0.5 tsp msg (or more salt)
- black pepper (to taste)
- rice paper (cut in half)
- 1 tbsp oyster sauce (for sauce mixture)
- 2.5 tbsp soy sauce (2-3 tbsp)
- 0.5 cup hot water
- 1.5 tbsp sugar (1-2 tbsp)
- sesame oil (for greasing the plate)

In a large mixing bowl, combine the ground chicken, minced carrot, minced red onion, minced garlic, and green onions.

Add 2 teaspoons of oyster sauce, 1 teaspoon of sesame oil, salt, msg (or extra salt), and black pepper to the meat mixture. Mix thoroughly until well combined.

Prepare the sauce by mixing 1 tablespoon of oyster sauce, 2-3 tablespoons of soy sauce, 1/2 cup of hot water, and 1-2 tablespoons of sugar in a separate bowl. Stir until the sugar is dissolved and adjust to your liking.

Cut the rice paper sheets in half to reduce carb content and make them easier to roll.

Dip a half-sheet of rice paper into room temperature water just until it softens.

Place the softened rice paper on a clean chopping board. Scoop a portion of the chicken mixture onto the paper and roll it tightly like a lumpia (spring roll).

Lightly grease a heat-proof plate with sesame oil to prevent sticking.

Arrange the chicken rolls on the greased plate.

Prepare your steamer. If you don't have a dedicated steamer, you can use a deep pan with a small amount of water and a rack.

Steam the chicken rolls for 15 minutes until the chicken is fully cooked through.

Serve the steamed rolls hot with the prepared sauce mixture drizzled over or on the side.
Notes
For a no-carb or freezer-friendly version, you can skip the rice paper and scoop the chicken mixture directly onto the plate to make steamed chicken balls. These are easier to store and portion in freezer cubes.
