- 8 Cashew nuts
- 4 cloves Garlic
- 2 Green chilies (Chopped)
- 1 inch Ginger (Chopped)
- 0.25 cup Water (For soaking the cashews; additional water may be added to adjust gravy consistency)
Steps
- 1
Place the cashew nuts in a bowl and cover them with 1/4 cup water. Soak for about 1 hour.
- 2
After soaking, grind the cashews with the ginger, garlic, green chilies, and the soaking water until smooth. Set the paste aside.

In a large bowl, combine the cashew-ginger-garlic-chili paste, fresh cream, curd, garam masala powder, cardamom powder, and salt. Whisk until smooth.
- 4
Heat the ghee in a pan over medium heat.
- 5
Add the cashew cream mixture to the pan.
- 6
Add the cubed paneer and simmer the curry for about 5 minutes.
- 7
While the curry simmers, add water as needed to adjust the consistency. Check the salt and spices and adjust them to taste.
- 8
Stir in the kasuri methi. Cover the pan and turn off the heat.
- 9
Allow the flavors of the methi to infuse into the curry.
