Ingredients

  • 1 lb chicken breast (referred to as 'chicken chest'; seasoned and cooked then chopped or shredded)
  • salt (to taste)
  • black pepper (to taste)
  • garlic powder (to taste)
  • cayenne pepper (to taste)
  • red pepper flakes (to taste)
  • dried thyme (to taste)
  • dried oregano (to taste)
  • dried basil (to taste)
  • 1 shallot (large, finely diced)
  • 4 cloves garlic (crushed and roughly chopped)
  • 3 tbsp olive oil (divided for browning chicken and aromatics)
  • 1 tbsp tomato paste (squeezed in)
  • 0.5 cup sun-dried tomatoes (chopped)
  • 4 cup chicken stock (referred to as 'a whole lot')
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese (freshly grated (Parmigiano-Reggiano))
  • 2 tbsp butter (cold)
  • 16 oz gnocchi (one standard package)
  • 2 cup fresh spinach (a handful)

Steps

    Generously season the chicken breasts with salt, pepper, garlic powder, cayenne pepper, red pepper flakes, thyme, oregano, and dried basil. Ensure the chicken is heavily coated.

    Finely dice one large shallot and roughly chop/crush the garlic cloves.

    In a heavy-bottomed pot over medium-high heat, add a generous amount of olive oil.

    Carefully lay the chicken into the pot and cook until fully cooked through and browned on both sides.

    Remove the chicken from the pot and either chop it into bite-sized pieces or shred it. Set aside.

    In the same pot, add a little more olive oil if needed, then add the diced shallots and chopped garlic. Sauté until fragrant.

    Squeeze in the tomato paste and add the sun-dried tomatoes. Cook for a few minutes to develop flavor.

    Pour in the chicken stock and bring to a simmer. Let it cook for about 15 minutes.

    Stir in the heavy cream and a good amount of freshly grated parmesan cheese.

    Allow the soup to simmer for about 20 minutes to thicken up.

    Taste the soup and add salt as needed.

    Add the cold butter, the cooked chicken, the gnocchi, and a handful of fresh spinach. Cook until the gnocchi is tender and the spinach has wilted.

Notes
