Express Peanut Noodles with Chicken
A fast, high-protein noodle bowl made with cooked chicken, rice noodles, peanut butter, soy sauce, lime, aromatics, and sesame. It comes together in about 5 minutes and is ideal for using leftover or rotisserie chicken.

Ingredients
- 150 g cooked chicken breast (Leftover or rotisserie chicken; shredded or cubed)
- 80 g cooked rice noodles
- 1 tsp peanut butter
- 1 tsp olive oil (Preheat in the frying pan before cooking)
- 1 clove garlic (Grated)
- 1 tsp fresh ginger (Grated)
- 1 tbsp soy sauce
- 1 lime lime juice (Juice of 1 lime; reserve extra juice for serving if desired)
- 1 scallion (Chopped; reserve some for topping)
- 1 tsp sesame seeds (For topping)
- chili flakes (To taste)
- sea salt (To taste)
- noodle water (A splash, as needed, to loosen the sauce)

Heat a frying pan over high heat. Add the olive oil and let it heat briefly until shimmering.

Add the peanut butter, grated garlic, grated ginger, chili flakes, and chopped scallion to the hot pan. Cook for 1–2 minutes, stirring continuously, until the aromatics are fragrant and the mixture looks glossy.

Add the soy sauce and lime juice. Pour in a splash of reserved rice-noodle cooking water and stir until the peanut mixture loosens into a smooth sauce.

Add the cooked rice noodles and shredded or cubed cooked chicken to the pan. Toss thoroughly until the noodles and chicken are evenly coated and heated through.

Transfer the noodles to a serving bowl. Top with the reserved scallion and sesame seeds, and finish with additional lime juice if desired. Season with extra chili flakes or sea salt to taste.
Notes
The recipe is designed for leftover or rotisserie chicken and cooked rice noodles. Reserve a little noodle-cooking water before draining the noodles so the sauce can be loosened as needed.
