Ingredients

  • 1 lb 80/20 ground beef
  • 0.75 tsp Sea salt
  • 0.5 tsp Freshly ground black pepper
  • 8 Small flour tortillas (Use small tortillas; the source recommends Vista Hermosa.)
  • 4 oz Medium cheddar cheese (Freshly grated)
  • 1 cup Iceberg lettuce (Finely shredded)
  • 0.25 White onion (Small onion; very thinly sliced)
  • 1 Roma tomato (Small; very thinly sliced)
  • 0.5 cup Dill pickle chips (For filling)
  • Avocado oil spray (For spraying the tacos; amount unspecified)
  • 2 tbsp Mayonnaise (For special sauce)
  • 3 tbsp Ketchup (For special sauce)
  • 1 tbsp Yellow mustard (For special sauce)
  • 1 tbsp Dill pickles (Finely chopped; for special sauce)
  • 2 tsp Pickle juice (For special sauce)

Steps

  1. 1

Position an oven rack in the upper third of the oven and preheat the oven to 425°F (220°C). Set a wire rack inside a half-sheet pan.

  2. 2

Make the special sauce by combining the mayonnaise, ketchup, yellow mustard, finely chopped dill pickles, and pickle juice. Mix until evenly blended.

  3. 3

Season the ground beef with the sea salt and freshly ground black pepper. Divide the seasoned beef into 8 equal portions.

  4. 4

Place one portion of beef over one half of a flour tortilla. Press the beef very thinly, spreading it almost to the tortilla’s edges.

  5. 5

Add some of the freshly grated cheddar over the beef-covered half of the tortilla.

  6. 6

Fold the uncovered half of the tortilla over the beef and cheese to form a half-circle. Flip the folded taco so the beef side faces upward. Repeat with the remaining tortillas, beef, and cheese.

  7. 7

Lightly spray the assembled tacos with avocado oil. Arrange them on the wire rack with the beef side facing upward.

  8. 8

Bake for 7–9 minutes, until the beef is almost cooked through and the cheddar is melted.

  9. 9

Switch the oven to High Broil. Broil the tacos for 1–2 minutes.

  10. 10

Turn the tacos over, spray the other sides with avocado oil, and broil for another 1–2 minutes, until both sides are browned and crispy.

  11. 11

Carefully open each taco and fill with the shredded lettuce, sliced onion, sliced tomato, dill pickle chips, and special sauce. Serve immediately.

Notes

The source recommends Vista Hermosa flour tortillas and Chosen Foods avocado oil spray. Handle the tacos carefully when opening them after broiling.
