- 1.5 tbsp plain yogurt (dahi)

Combine the whole wheat flour, salt, and yogurt in a mixing bowl. Add water gradually and knead until a smooth, slightly stiff dough forms; avoid making the dough soft or sticky. The yogurt is important for the finished puris' texture.

Divide the dough into small portions and roll each portion into a puri. Keep the rolled puris covered while preparing the remaining pieces so they do not dry out.

Bring a wide pot of water to a full boil. Carefully add the rolled puris to the boiling water and cook for about 2–3 minutes, until they float to the surface.

Remove the boiled puris from the water and gently wipe them with a clean cloth to remove surface moisture. They should be slightly dry before air-frying.

Preheat the air fryer to 190°C for 5–6 minutes. Arrange the puris in the basket in a single layer, without overlapping them; cook in batches if necessary.

Air-fry the puris at 190°C for 4 minutes, watching carefully and avoiding overcooking. Remove them when cooked and lightly finished on the outside.
