Ingredients

  • 1 Pork knuckle (1 to 1.5 kg; cut in half before cooking, then deboned and trimmed of fat after cooking)
  • Salt (A little, to season the meat)
  • Pepper (A little, to season the meat)
  • Sweet paprika (A little)
  • Olive oil (A drizzle, for browning the meat and aromatics)
  • 2 Onions (Thinly sliced)
  • 2 gousses Garlic
  • 1 c. à soupe Mustard
  • 5 c. à soupe Barbecue sauce
  • 1 c. à soupe Honey
  • 1 Beef bouillon cube (The image shows a reduced-fat cube)
  • 250 ml Water

Steps

  1. 1

Season the pork knuckle with salt, pepper, and a little sweet paprika. Cut it in half to make cooking easier.

  2. 2

Set the Cookeo to the Brown setting and pour a drizzle of olive oil into the cooking pot.

  3. 3

Brown one piece of pork knuckle for about 5 minutes on each side. Repeat with the second piece, then set the meat aside.

  4. 4

Add the sliced onions and garlic cloves to the pot. Cook until browned.

  5. 5

Return the pork knuckle to the pot with the onions and garlic.

  6. 6

Add the mustard, barbecue sauce, and honey. Stir to coat the meat with the sauce.

  7. 7

Add the beef bouillon cube and water. Stir one last time.

  8. 8

Close and lock the lid, then start pressure cooking for 50 minutes.

  9. 9

When cooking is complete, remove the meat and place it on a board. Remove the fat and bone, then shred the meat.

  10. 10

Return the shredded meat to the sauce and mix well.

  11. 11

Set the Cookeo to the Brown setting for 5 minutes to caramelize the sauce.

Notes

The stated cooking time corresponds to 50 minutes under pressure, plus the specified browning times. The description does not provide an alternative cooking method without a Cookeo.
