Ingredients
- 2 tbsp extra virgin olive oil
- 1 lb boneless, skinless chicken breasts (Diced into bite-sized pieces)
- 1 tsp kosher salt
- 1 tsp Italian seasoning
- 0.5 tsp freshly ground black pepper
- 0.25 tsp crushed red pepper flakes
- 1 medium yellow onion (Diced)
- 2 tsp garlic (Minced)
- 4 cup chicken broth
- 1 cup heavy cream
- 1 cup whole milk
- 1.5 cup small shell pasta (Uncooked)
- 1 cup Parmesan cheese (Freshly grated, plus more for serving)
- 0.5 cup mozzarella cheese (Shredded)
- fresh parsley (Chopped, for garnish)
Steps
- 1
In a medium bowl, combine the diced chicken with the salt, Italian seasoning, black pepper, and crushed red pepper flakes. Toss until the pieces are evenly coated.
- 2
Set a large Dutch oven over medium heat and heat the olive oil until shimmering.
- 3
Add the seasoned chicken and cook for 3–4 minutes, stirring occasionally, just until lightly browned on the outside; it will finish cooking in the soup.
- 4
Using a slotted spoon, transfer the chicken to a bowl and set it aside.
- 5
Add the diced onion to the same pot. Cook for 4–5 minutes, until softened.
- 6
Stir in the minced garlic and cook for 1 minute.
- 7
Slowly pour in the chicken broth.
- 8
Stir in the heavy cream and whole milk, whisking until smooth.
- 9
Add the uncooked pasta and partially cooked chicken to the pot.
- 10
Bring the chowder to a gentle simmer. Cook uncovered for 10–12 minutes, stirring occasionally, until the pasta is tender and the chicken reaches an internal temperature of 165°F (74°C).
- 11
Reduce the heat to low. Stir in the Parmesan and mozzarella until melted and smooth.
- 12
Serve warm, garnished with extra Parmesan and chopped parsley.
Notes
The chowder thickens as it sits. When reheating, stir in a splash of broth or milk if needed to loosen it. The source says to serve with extra Parmesan but does not specify an amount.
