Banana Bread Tiramisu

Ingredients
- 170 g plain flour
- 35 g spelt or wholemeal flour
- 0.75 tsp baking soda
- 0.5 tsp baking powder
- 1 egg (can substitute with 55g apple sauce)
- 100 g coconut sugar
- 2 ripe bananas (about 150g)
- 60 g coconut or non fat-free yoghurt
- 1 tsp vanilla extract
- 80 ml neutral oil
- salt (a pinch)
- strong brewed coffee (can use instant coffee with hot water)
- 200 g vegan whipping cream (whipped)
- 200 g vegan cream cheese
- 50 g cane or white sugar
- 50 g maple syrup
- cocoa powder (for dusting)

Preheat your oven to 180°C (350°F).

In a large bowl, whisk together the mashed bananas, neutral oil, salt, coconut sugar, egg (or apple sauce), yoghurt, and vanilla extract until well combined.

Gently fold in the dry ingredients (plain flour, spelt flour, baking powder, and baking soda) half at a time until just combined, being careful not to overmix.

Pour the batter into a standard loaf tin and bake for 55 minutes.

Let the banana bread cool in the tin for 10 minutes, then remove from the tin and let it cool completely for a few hours or overnight in an airtight container.

To make the cream, whip the vegan cream while gradually adding the maple syrup and cane sugar until it reaches almost stiff peaks.

Whisk in the vegan cream cheese until the mixture is smooth, then refrigerate until needed.

Prepare the strong brewed coffee and allow it to cool completely.

To assemble, cut the cooled banana bread into 1cm thick slices. Dunk each slice briefly into the cooled coffee.

Layer the soaked banana bread slices and the cream mixture into a serving dish or individual dishes.

Let the tiramisu sit in the fridge for a few hours to set.

Just before serving, sift cocoa powder over the top.
Notes
Top tip: Bake the banana bread the day before. The flavors will intensify overnight, it will be easier to slice, and it will better soak up the coffee flavor.
