    In a large mixing bowl, combine the 2 large eggs, 1 egg yolk, 200g powdered sugar, and 50g light brown sugar. Whisk vigorously for about 2 minutes until the mixture is smooth and the powdered sugar has completely dissolved; this step is essential for creating the shiny, crinkly top.

    Add the 115g melted butter, 45g oil, and 1/2 tsp coffee powder (if using) to the egg mixture. Whisk until the ingredients are well combined.
