Lazy Sunday Pasta with Herb Cheese and Tomato
A wonderfully simple 'lazy Sunday' pasta where the oven does most of the work. Creamy herb cheese melts together with roasted cherry tomatoes and garlic for an effortless sauce.

Ingredients
- 150 g herb cheese (such as Boursin or Paturain)
- 250 g cherry tomatoes
- 2 garlic (minced)
- 1 tsp Italian herbs
- 0.5 tsp hot & spicy seasoning mix (to taste)
- salt (to taste)
- 2 tbsp olive oil
- 200 g pasta (e.g., penne or fusilli, cooked according to package instructions)
- Parmesan cheese (grated, to taste)
- fresh basil (leaves, to taste)

Preheat the oven to 200°C.

Place the herb cheese in the center of a baking dish.

Arrange the cherry tomatoes and minced garlic around the cheese in the dish.

Sprinkle everything with the Italian herbs, hot & spicy seasoning mix, and a pinch of salt.

Drizzle the ingredients in the baking dish generously with olive oil.

Bake the dish in the preheated oven for about 20-25 minutes, until the tomatoes have burst and the cheese is soft.

Meanwhile, cook the pasta in plenty of salted water until al dente according to the package instructions. Drain, but reserve a little bit of the pasta water if needed.

Remove the baking dish from the oven and stir the cheese and tomatoes together until a smooth sauce forms.

Add the cooked pasta to the sauce in the baking dish and mix everything well.

Garnish the pasta with grated Parmesan cheese and fresh basil leaves to taste before serving.
Notes
For an extra creamy sauce, you can add a splash of the pasta cooking water when mixing. The 'hot & spicy' seasoning mix can be replaced with chili flakes for a similar kick.
