Ingredients

  • 500 g beef stewing meat (cut into cubes)
  • 2 tbsp oil (for frying)
  • 1 onion (finely chopped)
  • 3 clove garlic (finely chopped)
  • 100 ml sweet soy sauce (ketjap manis) (sweet Indonesian soy sauce)
  • 0.5 tsp nutmeg
  • 2 cloves (whole)
  • 500 ml water (or beef stock)

Steps

  1. 1

Cut the beef into evenly sized cubes.

  2. 2

Heat the oil in a Dutch oven and brown the meat on all sides. This helps develop a deep flavor.

  3. 3

Add the chopped onion and finely chopped garlic to the meat and sauté briefly until translucent.

  4. 4

Add the sweet soy sauce, nutmeg, and cloves to the pot.

  5. 5

Pour in the water (or stock) until the meat is just covered.

  6. 6

Bring everything to a boil, then reduce the heat to the lowest setting and gently simmer, covered, for about 4 to 5 hours.

  7. 7

The dish is ready when the meat is fork-tender and the sauce has reduced to a rich, dark gravy.

Notes

The author indicates that the exact spice list appears in the caption; the ingredients used here are the standard base for Smoor Djawa (ketjap manis, nutmeg, and cloves). For the best result, the meat should truly cook gently for 4 to 5 hours.
