Ingredients
- 200 g High-protein cottage cheese
- 50 g Smooth peanut butter
- 20 g Sugar-free maple syrup
- 1 tsp Vanilla extract
- 100 g Almond flour
- 30 g Unsweetened cocoa powder
- 80 g Baking chocolate or dark chocolate (The video uses 78% dark chocolate.)
- 1 tsp Coconut oil
- Sea salt (A pinch, for sprinkling.)
Steps
- 1
Place the cottage cheese, peanut butter, sugar-free maple syrup, and vanilla extract in a blender. Blend until completely smooth.
- 2
Add the almond flour and cocoa powder. Mix until you obtain a thick dough with a consistency similar to brownie batter.
- 3
Divide the dough into eight portions and shape each portion into a compact ball with your hands. If the dough is too soft, chill it for a few minutes before shaping.
- 4
Place the balls in the freezer for 5-10 minutes while you prepare the coating; this brief chilling helps them maintain their shape when coated.
- 5
Chop the chocolate and melt it with the coconut oil over a double boiler or in the microwave in short intervals, stirring between each interval. Continue until smooth and silky, taking care not to overheat it.
- 6
Dip each ball into the melted chocolate, turning it to coat completely. Let it drain for a few moments, then place it on parchment paper or a nonstick surface.
- 7
Sprinkle a small amount of sea salt over the coating of each ball before the chocolate sets.
- 8
Refrigerate the balls for about 30 minutes, or until the chocolate coating is completely firm and crisp.
- 9
Serve chilled or slightly tempered. The center should remain soft with a brownie-like texture, while the coating provides a crisp contrast.
