Ingredients
- 12 Medjool dates (pitted and roughly chopped)
- 1 cup boiling water (divided)
- 3 eggs (large)
- 0.5 cup maple syrup (for the cake)
- 1 tsp vanilla extract (for the cake)
- 0.25 cup olive oil
- 1 cup gluten free all purpose flour substitute
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp salt (for the cake)
- 1 tsp cinnamon (for the cake)
- 2 cup gluten free rolled oats
- 1.5 cup almond flour
- 0.333 cup coconut oil (melted)
- 0.75 cup maple syrup (for the crumble)
- 1 tsp vanilla extract (for the crumble)
- 0.5 tsp cinnamon (for the crumble)
- 0.5 tsp salt (for the crumble)
- 1 cup powdered sugar
- 3 tbsp dairy free milk of choice
- 0.25 tsp vanilla extract (for the glaze)

Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking dish.

Add the pitted and chopped medjool dates to a small bowl and pour in 1/2 cup of boiling water. Let them soak for ten minutes to soften.

Transfer the soaked dates along with the soaking water into a blender and blend until a smooth paste forms.

In a large mixing bowl, combine the date paste, eggs, 1/2 cup maple syrup, olive oil, and 1 teaspoon vanilla extract. Whisk until the mixture is thoroughly combined.

Gently fold in the gluten-free all-purpose flour, baking powder, baking soda, 1/2 teaspoon salt, and 1 teaspoon cinnamon. Mix until the batter is smooth and uniform.

In a separate medium-sized bowl, prepare the crumble topping by combining the gluten-free rolled oats, almond flour, melted coconut oil, 3/4 cup maple syrup, 1 teaspoon vanilla extract, 1/2 teaspoon cinnamon, and 1/2 teaspoon salt. Mix well until all ingredients are incorporated.

Pour the cake batter into the prepared 9x9 baking dish.

Sprinkle the streusel mixture evenly over the top of the batter. It is okay if some of the crumble sinks down, but aim for even coverage across the entire surface.

Bake for 45 to 55 minutes. The cake is done when a toothpick inserted into the center comes out clean.

While the cake is cooling, prepare the glaze by whisking together the powdered sugar, dairy-free milk, and 1/4 teaspoon vanilla extract in a small bowl until smooth.

Notes
