Ingredients
- 113 g Spaghetti
- 0.5 tbsp Salt for cooking pasta
- 10 cloves Garlic (Remove the center germ or green sprout before cooking.)
- 0.5 cup Extra-virgin olive oil
- 0.5 cup Pasta water (Reserved from cooking the spaghetti.)
- 1 tsp Salt for garlic cream sauce (Adjust to taste.)
- Fresh parsley (Finely chopped, to taste, for garnish.)
- Water for boiling garlic (Use as needed for each boiling cycle; the water is discarded.)
Steps
- 1
Remove the center germ, or green sprout, from each garlic clove.
- 2
Place the prepared garlic in water and bring it to a boil. Boil the garlic, then repeat the boiling process for a total of four to five times, using fresh water as needed and discarding the water between cycles.
- 3
Cook the spaghetti in boiling water seasoned with the listed pasta-cooking salt. Reserve 1/2 cup of the pasta water before draining.
- 4
Blend the repeatedly boiled garlic with the extra-virgin olive oil, reserved pasta water, and sauce salt until a smooth, velvety garlic cream sauce forms.
- 5
Toss the cooked spaghetti with the garlic cream sauce until evenly coated.
- 6
Add finely chopped fresh parsley, toss or mix it through the pasta, and serve.
Notes
The source does not specify the duration of each garlic-boiling cycle, the pasta cooking time, or exact blending equipment. Adjust the sauce salt to taste.
