Ingredients

  • 1 kg Lean Lamb Leg (trimmed of excess fat and cut into 1.5-inch cubes)
  • 700 g Potatoes (peeled and cut into large wedges or 1-inch chunks)
  • 1 tbsp Olive Oil (extra virgin)
  • 0.25 cup Lemon Juice (freshly squeezed (about 1-2 lemons))
  • 4 Garlic (cloves, minced)
  • 1 tbsp Dried Oregano (Greek oregano preferred)
  • 1 tsp Salt (adjust to taste)
  • 0.5 tsp Black Pepper (freshly ground)

Steps

  1. 1

Preheat your oven to 325°F (160°C). Prepare four large sheets of parchment paper, approximately 12x16 inches each.

  2. 2

In a large mixing bowl, combine the cubed lamb and potato wedges.

  3. 3

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, dried oregano, salt, and black pepper to create the marinade.

  4. 4

Pour the marinade over the lamb and potatoes. Toss thoroughly with your hands or a large spoon to ensure every piece is evenly coated. For better flavor, you can let this marinate in the fridge for 30 minutes, though it is not strictly necessary.

  5. 5

Divide the mixture into four equal portions. Place one portion in the center of each parchment paper sheet.

  6. 6

Fold the parchment paper over the food and crimp the edges tightly to create a sealed pouch (the 'bandit' style). This prevents steam from escaping, keeping the meat tender.

  7. 7

Place the four pouches on a large baking sheet. Transfer to the oven and roast for 2.5 hours.

  8. 8

Optional: For a bit of color, open the pouches carefully (watch for hot steam) during the last 15 minutes of cooking and increase the heat to 400°F (200°C) to brown the edges of the meat and potatoes.

  9. 9

Remove from the oven and let the pouches rest for 5-10 minutes before opening. Serve the contents of each pouch directly on a plate, ensuring you pour over any juices collected at the bottom.
