Avocado Mayonnaise

Ingredients
- 2 eggs (hard-boiled)
- 0.5 avocado (ripe)
- 1 tbsp water (a splash to adjust consistency)
- 1 tbsp olive oil (a drizzle)
- salt (to taste)
- 0.5 lime juice (the juice of half a lime)
- chili (optional, to taste)
- cilantro (optional, fresh)

Boil the eggs in boiling water for 10 minutes until they are fully hard-boiled.

Once cooked, peel the eggs and place them in a blender jar or food processor.

Add the half avocado, the juice of half a lime, a splash of water, a drizzle of oil, and a pinch of salt to the jar.

If a spicy or aromatic touch is desired, add the optional chili and cilantro at this stage.

Blend all ingredients with a hand blender until a smooth and homogeneous cream is achieved.

Transfer the mixture to a container and let it chill in the refrigerator before serving to allow the consistency to set.
Notes
A suggestion is to add a clove of garlic for a more intense flavor. By using hard-boiled eggs instead of raw ones, the texture is denser and it is safer for consumption.
