Tomato and Oat Savory Biscuits

Ingredients
- 180 g rolled oats (gluten-free if necessary)
- 3 tomatoes (about 300g)
- 2 tbsp olive oil
- herbs de Provence (to taste)
- salt (to taste)
- pepper (to taste)
Steps

Preheat the oven to 160°C (320°F).

Place the oats, tomatoes, olive oil, herbs, salt, and pepper in a blender or food processor.

Blend all the ingredients until a smooth paste is formed.

Line a baking sheet with parchment paper.

Spread the dough very thinly on the sheet using a spatula to ensure maximum crunchiness.

Place in the oven and bake at 160°C for 30 to 40 minutes, until the edges are golden brown and the dough is dry.

Let cool completely before breaking into pieces or cutting into crackers.
Notes
For very crunchy crackers, make sure to spread the dough as thinly as possible. If the crackers are still soft after 40 minutes, extend the baking time by a few minutes while monitoring closely.
