Steps
Mix the warm oat milk, sugar, and yeast, then let stand for about 5 minutes.
While the yeast mixture rests, add the remaining dough ingredients to a mixing bowl.
Add the yeast mixture to the dough ingredients and knead until smooth. Add a little flour or oat milk if needed.
Cover the dough and let it rest in a warm place for 1–2 hours, until doubled in size.
To make the filling, mix the softened vegan butter with the finely chopped garlic, coarse sea salt, and seasonings of your choice. Reserve about one teaspoon of the filling, then refrigerate the rest to chill again.
Turn the dough out onto a floured work surface and roll it into a rectangle.
Spread the filling evenly over the dough; set aside the reserved portion for the topping later.
Cut the rectangle lengthwise into three strips and stack them to make one long, three-layer strip.
Cut the strip crosswise into six equal rectangles. Stack the rectangles in pairs to make them easier to place in the loaf pan.
Stand the stacks upright in a loaf pan, with the smooth sides together and the exposed layers facing up.
Cover the bread and let it rest for 30 minutes. Meanwhile, preheat the oven to 200 °C (400 °F) conventional heat.
Bake the bread at 200 °C (400 °F) conventional heat for 40–55 minutes.
Immediately after baking, spread the reserved filling over the bread.
Let the bread cool slightly. Remove the whole loaf from the pan, then pull it apart layer by layer while still warm and enjoy.
Notes
The instructions do not specify exact amounts of the extra flour or oat milk; use both only as needed. The amount and type of seasonings for the filling are not specified.
