Homemade French Crêpes
A versatile recipe for thin and light crêpes. The author presents two versions: the traditional French one with butter and vanilla, and her personal version which includes sparkling water for an airier and less elastic texture.

Ingredients
- 3 eggs
- 250 g flour (sifted)
- 500 ml milk
- 250 ml sparkling water (only for the author's personal version)
- salt (a pinch)
- 2 tbsp oil (or melted butter for the French version)
- 1 tsp sugar
- 1 tsp vanilla extract (optional, for the French version)

In a large bowl, briefly whisk the eggs until combined.

Add the milk, sugar, salt, and vanilla extract (if using) to the eggs.

Incorporate the sifted flour and oil (or melted butter) into the liquid mixture.

If following the author's personal version, add the sparkling water at this point.

Mix very well with a blender or whisk until no lumps remain and the batter is completely smooth.

Pass the batter through a fine sieve to remove any remaining lumps and ensure a perfect texture.

Heat a non-stick skillet over medium heat and cook the crêpes by pouring a small amount of batter and swirling the pan to coat the bottom. Cook until the edges turn golden, flip, and cook briefly on the other side.
Notes
The author prefers her own recipe (with sparkling water) because it produces thinner and less elastic crêpes than the traditional French version. The French recipe yields approximately 12 crêpes, while the version with sparkling water yields about 15.
