Duck Breast Tataki
A delicious fusion of French duck breast and Asian flavors, this tataki is quickly seared to remain tender inside, then topped with a smooth ginger and sesame sauce.

Ingredients
- 2 duck breasts (trimmed)
- 15 cl oyster sauce
- 15 cl sweet chili sauce
- 3 cl sesame oil
- 0.5 red onion (finely sliced)
- 1 gousse garlic (minced)
- 5 g fresh ginger (grated)
- fresh cilantro (for garnish)

Prepare the duck breasts by scoring the skin in a crosshatch pattern with a sharp knife, without cutting into the meat.

Heat a pan over high heat without adding any fat. Place the duck breasts in the pan skin-side down.

Sear the duck breasts for about 1 minute on each side to achieve a nice exterior color while keeping the center raw (the principle of tataki).

Remove the duck breasts from the pan and let them rest for a few minutes before slicing them thinly.

In a bowl, prepare the sauce by mixing the oyster sauce, sweet chili sauce, and sesame oil.

Add the minced garlic and grated fresh ginger to the sauce. Mix well.

Arrange the duck slices harmoniously on a serving platter.

Generously drizzle the prepared sauce over the duck.

Sprinkle with the finely sliced red onion and fresh cilantro leaves before serving.
Notes
The secret to tataki lies in searing very quickly over very high heat. The duck should be hot and crispy on the outside but remain rare on the inside. This dish can also be enjoyed cold.
