A creamy, tangy ranch dressing blended with fresh cilantro, jalapeños, lime, garlic, and ranch seasoning. It can be served on tacos and salads or used as a dip for taquitos; it thickens as it rests.

Ingredients

  • 2 jalapeños (Whole; adjust the amount or remove seeds for less heat.)
  • 1 bunch fresh cilantro (Washed.)
  • 1.5 cup mayonnaise
  • 1.5 cup milk (Use more or less to adjust the dressing's thickness.)
  • 1 tbsp garlic (Minced or pressed.)
  • 1 tbsp red wine vinegar
  • 3 tbsp ranch seasoning
  • 0.75 tsp salt (The transcript states approximately 1/2 to 1 teaspoon, to taste.)
  • 0.75 tsp black pepper (The transcript states approximately 1/2 to 1 teaspoon, to taste.)
  • 1 tbsp sugar
  • 1 lime juice (Use the juice of 2 limes if the first lime is not very juicy.)

Steps

    Wash the cilantro and prepare the jalapeños, garlic, and lime. For a milder dressing, remove the jalapeño seeds and membranes before blending.

    Add the jalapeños, washed cilantro, mayonnaise, and milk to a blender. Use slightly more or less milk depending on whether you want a thinner or thicker dressing.

    Add the garlic, red wine vinegar, ranch seasoning, salt, black pepper, sugar, and the juice of 1 lime. If the lime is not very juicy, add the juice of a second lime.

    Blend on high for about 1 minute, or until the dressing changes from white to green and the cilantro is thoroughly incorporated. Blend longer if needed to eliminate visible cilantro pieces and achieve a smooth texture.

    Pour the dressing into a covered container. It will initially seem quite thin, but it will thicken as it sits. If it becomes too thick, stir in a little additional milk.

    Serve with sweet pork tacos, over salads, or as a dip for taquitos.

Notes

Refrigerate in a covered container. The dressing thickens as it rests; loosen it with additional milk if necessary. The creator has made this recipe for more than 20 years.
