Peanut Gochujang and Lime Udon
A creamy and nutritious udon noodle recipe, perfect for meal prep. It combines the richness of peanut butter with the spiciness of gochujang and the freshness of lime.

Ingredients
- 1 kg udon noodles
- 300 g textured soy protein (TSP) (granules)
- 3 tbsp sesame oil
- 2 tbsp peanut butter (heaping)
- 1 tbsp gochujang (heaping)
- 5 garlic (peeled cloves)
- 5 cl soy sauce
- salt (to taste)
- water (the same volume as the other sauce ingredients)
- 2 red bell peppers
- 1 scallion (green parts only)
- 0.5 yellow onion
- 3 limes

Cook your udon in boiling water according to the package instructions (usually 2-3 minutes).

Thinly slice the vegetables (peppers, scallion, onion) and cut the limes into wedges.

Blend all the sauce ingredients together (peanut butter, gochujang, garlic, soy sauce, water), using some of the udon cooking water if possible to add starch.

Heat the sauce in a large pot, then add the dry textured soy protein (TSP) directly into it.

Gradually add water as the TSP rehydrates, stirring each time. The sauce should maintain a creamy consistency.

Taste and adjust the salt if necessary, then add the sesame oil at this stage.

Serve the sauce over the noodles, add the fresh vegetables, and mix everything together.

Serve the portions with a lime wedge or distribute everything into meal prep containers for later.
Notes
This recipe is ideal for meal prep as it reheats very well in the microwave. The combination of TSP with red bell pepper and lime allows for better iron absorption thanks to the vitamin C.
