- 0.25 tsp coarse salt
- 1 cup unsalted butter (room temperature; 2 sticks)
- 0.75 cup confectioners’ sugar

Sift the 2 cups of all-purpose flour and 1/4 tsp coarse salt together. Mix them in a bowl and set aside.

In a separate bowl, mix 1 cup of room temperature unsalted butter on high speed until fluffy, approximately 3 to 5 minutes.

Gradually add 3/4 cup confectioners’ sugar to the butter and continue to mix until the mixture is pale and fluffy.

Add the flour and salt mixture to the butter and sugar mixture, mixing until just combined.

Butter a square baking pan.

Pat and roll the shortbread dough into the prepared pan so it is no more than 1/2 inch thick.

Notes
For the best results, do not scrimp on the quality of the butter. The dough can be cut into traditional rectangular 'fingers' or squares before baking.
