Ingredients

  • Chicken breast (Pounded thin and even)
  • Flour (For coating)
  • Eggs (Beaten, for coating)
  • Breadcrumbs (For coating)
  • Oil (For frying)
  • Butter
  • Garlic
  • Cherry tomatoes
  • Fresh basil
  • Mozzarella (For topping)
  • Salt (To taste)
  • Black pepper (To taste)

Steps

  1. 1

Pound the chicken breast until thin and even.

  2. 2

Set out the flour, beaten eggs, and breadcrumbs for coating. Coat both sides of the chicken in flour, then dip it in egg, and finish by coating it in breadcrumbs.

  3. 3

Heat oil in a pan. Fry the breaded chicken until golden and crisp on both sides, then transfer it out of the pan and set aside.

  4. 4

In the same pan, add the butter, garlic, cherry tomatoes, and fresh basil. Cook until the tomatoes blister, then remove the tomato mixture from the pan.

  5. 5

Return the chicken to the pan and top it with mozzarella. Place the pan in a hot oven until the cheese melts.

  6. 6

Lightly crush the tomatoes with a fork, spoon them over the chicken, and serve.
